What
to Expect
All classes offer hands-on learning in a relaxed and intimate
setting. Class sizes are deliberately small, allowing
participants the time and space to truly master the lesson
and their cooking skills.
Each class lasts about 3 hours and will cover a full menu
that includes appetizer, soup, salad, entree, side dish and

We can also work with you to design special menus for
private sessions or parties.

What
You Will Learn
A typical class will also cover several of the following
concepts, skills and techniques:
•Knife Skills: Learning to use a sharp knife properly
and safely is the foundation to good cooking
•Sauces and Stocks: A foundational element of
cooking, their value cannot be over-emphasized
•Principles of Preparation: Working with eggs,
fish and seafood, red meats and poultry, pastas, rice,vegetables
and vegetable products.
•Methods of Heat Transfer:
Boiling, Steaming, Stewing, Casseroling, Spit Roasting,
Oven Roasting, Grilling, Shallow Frying or Sauteing,
Deep Frying, Braising, Baking, Poaching, Au Gratin,
Blanching, Caramelization, Papillote (cooking in paper)
